Winemaking method:
The vinification follows the Georgian method: Qvevri maturation is a method that has been included in the UNESCO list of intangible cultural heritage of humanity. Based on the principle of frugality, this technique consists of letting the wine macerate in a clay jar (or Qvevry) and burying it underground.
The grapes are harvested and de-stemmed by hand. Before vinifying the grapes, Fabien removes the stalks, i.e. the vegetal part of the bunch.
The objective is to keep only the grape berries in order to obtain a fruity, colourful, full-bodied wine and to eliminate the herbaceous, vegetal and bitter flavours. The wine is pressed and then macerated for 10 days in infusion. It is then pumped up by hand without the use of a pump to avoid disturbing the wine.

The wine is then put into qvevry and buried underground at the place of harvest: the wine is thus vinified within the earth that nourished it. It will be bottled in September 2023 after the harvest.
Why is this cuvée exceptional?
This unique method of vinification allows the production of an exceptional terroir wine. Fabien goes even further than the parcel-based vinification by raising the wine in a jar and burying it in the soil of its origin.
Wines made using the Georgian method are incomparable to wines made in wooden barrels or steel fermentation tanks. This wine is less tannic, with rounder and softer notes.
